So this weekend, Becky and I tried our hand at a few new recipes. Included in these were All Things Pumpkin as delightfully detailed on Becky's blog. Of course, you'll notice she didn't include a picture of the pumpkin cookies.
There are a few reasons for that. First, we were too busy talking, brain storming and eating the results to remember the photo. Second, the cookies, though delicious, were FLAT! They looked a little more like pumpkin crepes than cookies.
We had some of the roasted pumpkin leftover and - as I had a cook out to attend tonight - I decided to try the cookies again.
They look so promising when they go into the oven...

Still, all is not lost. Thanks to the creative thinking of my mother, a solution has been found. While this recipe seems to be a failure at making plump cookies... as pumpkin cream cheese whoopie pies, it is a resounding success!
